Playing Morrowind is still not like sitting at a table with a GM, but it's a big step closer. Combat is real time and works almost exactly like the earlier Elder Scrolls titleshold a button and move the mouse, then release. The direction you moved determines how you operate the weapon (slash, stab, etc.). You can also choose to always use that weapon's most potent attack (a bash with a hammer, for example, is more devastating than a poke), in which case combat becomes kind of a clickfest.
